Happy Pinterest Thursday to ya! Boy do I have a GOOD one for ya this time.
Shrimp and Asparagus Stir Fry with Lemon Sauce (from Pinterest).
As I scroll through Pinterest, if I am being honest, I rarely pay attention to the recipes I am pinning. I am looking at the beautiful pictures! Aren’t you? I am not concerned about ingredient lists, fat content, or back story. I am like, “That is so pretty.” So I Pin away. When it comes time to try something new that is when I go back through my pretty pins of pretty food and weed out the bad seeds. This is the opportunity to look at ingredient lists, check the amount of effort that will need to be expended, and check for paprika in the recipe.
After completing this dish “Lemony Shrimp and Asparagus” I was amazed at how quickly it was on the table ready to go… then I read more of the blog… it was a five minute meal, WITH NO PAPRIKA. Like I mentioned I don’t “read” anything ahead of time. I was amazed at how truly fresh, easy and delicious it was. If I had read it maybe I would have not been so amazed at how quickly it came together, but I was. I should add, to me, this recipe seemed quite versatile. The recipe called for rice to be served along side, hence the “stir fry” in the name. I think it would be really great over angel hair pasta as well. You could add water chestnuts, chives, sesame seeds, -M suggested crunchy rice noodles. -M eating this dish was a shock to me! -M loves shrimp, don’t get me wrong, but green stuff (asparagus) nope. So I had some left over linguini noodles that I had saved knowing this meal was coming. As it was, only Kaitlin (our oldest) was home to partake. Kind of on purpose, I knew she would appreciate the meal. -M did not want to eat was was prepared, so he was treated with one of his favorite dishes; shrimp fettucini alfredo with homemade sauce. He was quite happy. But as Kaitlin and I went on and on about this dish being so delicious, I think he felt like he was missing out. So he tried it! Not only did he try it he LOVED IT! And ate any hope of left overs. EVEN THE ASPARAGUS! He ate it! (I don’t believe it would have been that great of a leftover meal anyway).
So, there ya have it. Another Pinterest winner.

Here are the ingredients, I do not care for fresh ginger. I subbed it for ground ginger, maybe a 1/4 tsp. Also, sugar in anything other than dessert scares me, at first I thought I would not add it. The lemon sauce is certainly lemony! Add the sugar. Other than that, it was all in.
|1 lb||Shrimp, large raw|
|1 tsp||Lemon, zest|
|2/3 cup||Chicken stock|
|1/4 cup||Lemon juice|
|1 tbsp||Soy sauce|
Baking & Spices
Oils & Vinegars
|4 tbsp||Olive oil|
Do all the lemon sauce first let it sit, don’t forget the cornstarch will go to the bottom of your bowl and try to make concrete, give a good whisk before pouring over the shrimp and asparagus.
